Mike Russell, at Eternal Perspectives, has answered his own question on the origin of the immune system. He believes in the gap theory. Not a lot of people do, but those who do often know a lot about the Bible, including something about its original language.
My musings on his question are here. Another way of putting the question is "when did non-human organisms start to die?" I don't think there is an answer that will satisfy everybody.
